Guizhou hot pot consists of a simmering metal pot filled with broth, which is placed at the center of a table, and raw slices of meat and platters of vegetables piled high around it. 

After ingredients are cooked in the boiling hotpot soup, guest look for their favorites in the pot by turns, and carefully lift food onto their plate with chopsticks.

As same as other styles of hotpot, Guizhou hotpot has been divided different into many styles for different locations. These hotpots are typically peppery, sour and full of dried red chillies for distinctive spiciness. The base soup of Guizhou Hotpot is famous throughout China for its unique flavour and tantalising smell. 

SOUR SOUP FISH

Guizhou sour soup could be divided into red and white sour soup.Main material of red sour soup is wild tomato from moutains,and white sour soup is made from rice.Sichuan peppercorn could be used in abundance for its tingle flovar. After the flavor of broth that filled with the air can be smelled, the sweet and white fish is added to the pot. The fish used in this dish is always locally sourced and tastes incredibly fresh.

Guiyang kidney bean hot pot. which is the first choice for dinner by local people,is unique in Guizhou. Only Guizhou native chef can cook it well. Kidney bean hot pot takes beans as the main material of hot pot,which should be boiled for a long time till beans are soft and slippery。

Wild mushroom meat cake chicken hotpot must use the soup stewed by local chicken to taste enough. After boiling for 2 hours, the strong chicken flavor is soaked in the soup. Then use the meat cake made of local wild vegetables and meat mixed together, and put it down to the hot pot of chicken soup. The meat smells delicious, and you will not feel greasy of eating too much. It has both the aroma of chicken and the freshness of mushroom, so it's needless to say the nutritional value too much.
